Healthy Pasta and Noodle Recipes made with Holista 

Shrimp and Clams Marinara made with Holista Low GI Spaghetti

Makes 4 servings

Ingredients

  • 8 oz Holista Low GI Spaghetti

  • 3 Tbsp olive oil

  • 4 cloves garlic, roughly chopped

  • 1 pound 16-20 shrimp, cleaned and deveined

  • 2 dozen littleneck clams cleaned and rinsed

  • ½ cup, dry white wine

  • 2 cups marinara tomato sauce

  • 2 Tbsp chopped parsley

  • salt and pepper to taste

Directions:

  1. Fill a large pot ¾ full with water, bring to a boil.

  2. Place a large skillet pan on stove. When pan is hot, add olive oil and garlic, cook garlic until it just starts to color.

  3. Add clams to pan, cover and continue cooking until clam shells start to open.

  4. When clams start to open, add shrimp and cover, cook for 1 minute.

  5. Add white wine to pan reduce liquid by half.

  6. When wine is reduced, add marinara sauce and cook until hot.

  7. Add salt and pepper to taste, reduce heat.

  8. When pasta water is boiling, add Holista Low GI spaghetti to water.

  9. Bring back to boil, boil 3 minutes stirring occasionally. Drain water, reserving ½ cup of water.

  10. Add drained noodles to sauce, stir until mixed (if too dry add a little of reserved pasta water to thin out).

  11. Sprinkle with chopped parsley. Enjoy!
