Roast Chicken Noodle Vegetable Soup

The best part about making a roast chicken dinner is making soup the next day with the left-over carcass.


The more meat left on the bones, the better!


You can even use a left-over store prepared roasted chicken!

Ingredients ​

  • 1 left over roasted chicken carcass

  • water

  • 6 stalks celery sliced

  • 1 onion thinly sliced

  • 1 Tbsp “Better Than Bouillon” roasted chicken base

  • 4 cups baby carrots

  • 4 cups chopped broccoli

  • 4 cups loosely packed spinach leaves

  • Salt and pepper

  • 1/4 package of Holista Linguine - broken Into halves


  1. In a large pot place chicken, onion, celery and bouillon. Add enough water to cover the ingredients.

  2. Bring to a boil. Then reduce heat and gently simmer at least 2 hours.

  3. Remove chicken from pot. Let chicken cool a few minutes and remove meat from the bones and gather any loose chicken. Discard bones including all small bones. Then place meat pieces into the pot of soup.

  4.  Add carrots and broccoli to the soup.

  5. Bring to a boil, then simmer 20 minutes.

  6. During last 2 minutes, add spinach. Salt and Pepper to taste.

  7. Boil ¼ package of Holista Linguine for 3 minutes and add to soup.

  8. Enjoy!
